#7 Super easy pink marble Mickey Mouse cupcakes

My sister turned two a couple of weeks ago and for her birthday party I made some Mickey Mouse cupcakes, they were originally going to be Minnie but I wasn’t able to find anything to use as bows.

Ingredients
For the cupcakes (makes 12)
100g (4 oz.) caster sugar
100g (4 oz.) softened butter or margarine
2 medium eggs
100g (4 oz.) self-raising flour
1 tube pink gel food colouring

Method
  1. First you need to preheat the oven to 180ºC, 350ºF or Gas Mark 4 and fill a cupcake tray with cupcake cases.
  2. Next you need to cream the butter/margarine with the sugar until it’s light and fluffy, you can either use the back of a wooden spoon or an electric (or handheld)whisk. 
  3. Once that’s done you need to beat in your eggs one at time making sure you add a small bit of flour with each egg.
  4. Then gently fold in the rest of the flour.
  5. Split the mixture into two bowls and put one aside.
  6. With the chosen mixture add as much or as little food colouring you want until you get your desired colour.
  7. Add the two mixtures together into one and fold them into each other to create the marble effect
  8. Add the mixture to the cupcake cases using a table spoon and another spoon to scrape off the excess.
  9. Bake for 20-25 minutes
  10. Clean up and tidy your workspace (how fun!)

Now it's time for the decorate the cupcakes with pink buttercream and mini oreos! You can either make the buttercream whilst the cupcakes are in the oven or a little later, it doesn't really matter.

Ingredients
50g (2 oz.) butter or margarine
100g (4 oz.) icing sugar
1 tube of pink gel food colouring - you can use the same tube you used for the cake
24 mini oreos (about five packets)

Method
  1. Cream the butter or margarine and gradually add the icing sugar, again you can either use the back of a wooden spoon or an electric (or handheld) whisk
  2.  Add as much or as little food colouring you want until you get your desired colour.
  3. Once your cupcakes are cooked leave them to cool completely before decorating. To decorate mine I used a piping bag, if you don't have one you can you can double up food bags and snip off the end! It's up to you how you add the buttercream - just have fun with it!
  4. Now it's time for Mickey's ears! Add two mini oreos on each side of the top of the cupcake and it's as simple as that
  5. Repeat this step with all the cupcakes and enjoy!
