#20 Halloween pumpkin spice cupcakes |halloween mini series|
Hello! As Halloween is fast approaching I thought I would make a mini series of Halloween inspired blog posts and after watching Zoella's most recent baking video I knew that these cupcakes would be perfect to start of my mini series!
Ingredients (for the cupcakes)...
In her video Zoe used 1/2 teaspoon of nutmeg however I didn't have any so it's up to you if you use it or not!
The cupcakes....
The first thing you need to do is preheat your oven to 190°C or gas mark 5 or 160°C if you have a fan oven like I do! Now in a large mixing bowl add all your dry ingredients (minus the caster sugar!! We ended up missing this step as we were following Zoe's video as we baked...oops)
Or alternatively you can cream your butter or margarine with the caster sugar first before adding the rest of the dry ingredients - it's up to you!
After you've combined your dry ingredients with the butter/margarine and sugar you now need to add your eggs, making sure it's all mixed in!
Next is the pumpkin! Trying to find this was a nightmare! Just a heads up, it's not sold in Sainsburys or Morrisons but it is sold in Waitrose for £2 and I think Tesco might sell it too!
Once you've mixed in the pumpkin your cake batter should look something like this and have quite a thick consistency!
